Summer is all about daylight saving and long, light-filled evenings. It’s conducive to entertaining. I love walking down to the beach for a late-afternoon dip, before getting ready for dinner. My wife and I enjoy having people over, plus we have three boys, so there are always friends and family hanging out. This summer we will split our time between Britain, where my wife’s family lives and Sydney. We are lucky enough to be able to have the best of both worlds. And when we get back it will be full steam ahead for the opening of my new restaurant [No 1 Bent Street], in early February.
